I am thinking of trying one of them, but curious which add on and supplements are worth a damn …. or could they all be combined into a full thing.

I’ve played neither of them, but the handling of fights/death and insanity in Cthulhu Dark seem more thematically powerful than Cthulhu Grey’s changes.

In Cthulhu Dark if you fight you die, focusing play on the discovery and experience of otherworldly horror, and like Lovecraft’s stories, not on combats. And magic seems simply handled by the option in Cthulhu Dark to risk your sanity to succeed.

I think that’s true. Lovecraft’s stories don’t have gun fights in them, but Cthulhu RPGs often do.
